Almost every summer
when visiting my parents,
Mom and I love
Mom and I love
to dine with our dear
family friend, Miss
Charlotte at a wonderful
gem of a restaurant in
Portland, Oregon called
Albertina's.
Albertina's is named after
the beautiful young wife
of Alexander Kerr, founder
of the Kerr Glass Manufacturing
Company, best known for
producing canning jars.
They met when she
worked in his factory.
Tina, as she was known
by her family, died at the
age of 21 of Typhoid, only
four months after the birth
of their son John. Her
dying request was that a
home for orphans be
established in her name.
Alexander donated their
home and from this first
nursery evolved an orphanage
and what is today known
as the Albertina Care Centers.
Their mission is to assist
children, adults and
families in Oregon who
face challenges from
mental health and
developmental disabilities
with programs that help them
lead fuller and more
independent lives.
The first orphanage
reopened in 1981 as
Albertina's Restaurant
and Shops {gift, thrift
and antiques}. It is fully
staffed and run by volunteers
with all of the proceeds
used for the organization.
The food at the
restaurant is wonderful
and you feel like
you are visiting
your grandmother's
table.
They publish
a cookbook.
To celebrate
another memorable
trip to the Pacific
Northwest, I'd
like to share my
favorite recipe
from Albertina's.
It's easy, pretty
and
so
delicious!
Albertina's Blueberry Tart
Yes, those are blueberry stains! Here's what you need: 5 cups of blueberries, divided |
1 cup of flour
1/8 teaspoon salt
2 tablespoons sugar
1/2 cup cold butter
1 Tbs white vinegar
2/3 cup sugar,
1 tsp cinnamon
3 Tbs flour
My mom's addition ~
It really enhances the taste!
Zest of 1 lemon
